The power of the ‘booch’

So, it seems no matter where you turn there is kombucha. There are kombucha bars, grocery stores are putting taps in and even Wal-Mart is carrying bottles of it.

For some, you might be like what is kombucha actually ?!  Well, it’s essentially fermented tea. Which, I know sounds so gross and that is what I always thought too!

Then I got out of my comfort zone and picked up a bottle and just like so many others I was hooked.

There may be some debate about what health benefits kombucha has, but most makers will tell you that it helps with digestion and inflammation.

This claim comes from the probiotics that are in each glass of ‘booch’. These probiotics give your gut healthy bacteria.

There are many other claims like prevention of liver and heart disease, but of course none of this is proven. As for me since adding some Kombucha to my diet I have noticed the following benefits.

First, I definitely see help with digestion. I have a weak stomach to say the least. I could eat the healthiest meal and if one thing doesn’t agree with me I get stomach pains. On days I drink a glass of Kombucha I don’t have any issues.

I also feel that it gives me a boost of energy. I like to drink a glass in the middle of the day if I start to feel low energy. I have noticed that I will get the perk I need. Plus I love that kombucha has a fizz to it, which I also believe could be beneficial for those who are addicted to Diet Coke ( I used to be guilty of this 😦 ) !!

Now, you may be sold and headed out to the local kombucha bar to get your fix, but there are a few things that I like to pay attention to when I buy mine.

Check the amount of fruit juice. I like to look for ones with as little as possible because then you are just getting an unnecessary sugar fix.

Also check to make sure there are no artificial sweeteners because again what’s the point of putting artificial stuff in our bodies!

There are a lot of other things that you can look into when purchasing like water filtration and pasteurization. So, I say just do your research before you dive in!

I love trying out different flavors and brands now that I know what to look for and I certainly can not get enough of it!

Baked oatmeal apple mini muffins

Trust me, you will not be able to get enough of these muffins!

Recipe:

1 cup oat flout

1/2 cup of oats

1/2 tsp baking powder

1/4 tsp baking soda

Pinch of salt

1 tbsp cinnamon

2 ripe bananas mashed

2 tbsp melted coconut oil

3/4 cup unsweetened almond milk

1/4 cup pure maple syrup

1 flax egg

1 small apple dices

Preheat oven to 350 degrees. Combine all dry ingredients in large bowl. Add in liquid ingredients and whisk together. Pour into muffin tray. Add apples to top of better. Bake for 20 minutes.

Stir fry zoodles

I have been really experimenting with recipes this week. This stir fry recipe has been a household favorite, even with my boyfriend who has been begrudgingly trying my plant based recipes. 😉

 

Recipe:

4 zucchinis spiralized
1 cup broccoli
1 cup mushrooms
1 cup bok choy chopped
1 cup snap peas
2 red peppers chopped
2 yellow peppers chopped
1/2 yellow onion chopped

Sauce:

1 cup soy sauce
1 garlic clove chopped
1 tbsp sugar
1 tbsp ginger
2 tbsp rice vinegar
1 tbsp sesame oil

In large pan or wok cook broccoli, mushrooms, bok choy, snap peas, peppers, and onion in sesame oil until soft. Add in zoodles with sauce cook for about 3-5 minutes. Can garnish with red pepper flakes and sesame seeds to taste!

Vegan Alfredo pasta

So, lately I have been trying to adjust into a plant based diet. It is not always easy, but there are so many recipes out there to help you make vegan meals. Personally, when I eat all plant based I feel amazing and although it maybe hard for you cheese addicts to believe this Alfredo sauce is very satisfying.

Recipe:

1 clove of garlic minced
1/2 cup unsweetened almond milk
1 cup raw cauliflower chopped
1/4 cup of veggie broth

Put all of these ingredients in a pan and let simmer until the cauliflower is soft. Then put these ingredients in a blender.

1 1/2 tbsp of nutritional yeast ***
Splash of apple cider vinegar or lemon juice
1 tbsp tahini

Blend these ingredients with the cooked cauliflower and set aside.

Cook spinach, mushrooms and onion in oil in a pan until sauteed.

Cook pasta according to package

Mix pasta, sauteed vegetables, and sauce from the blender.

I like to add red pepper flakes for an extra kick!

Enjoy!!!

***Nutritional yeast is different than active yeast which is used to make bread. The nutritional yeast gives the sauce a cheese taste/texture. Active and nutritional yeast are not interchangeable.

 

Finally, Fall!

It was a fantastic Summer, but as Fall officially hit on Saturday evening my inner basic white girl is rejoicing!!

As the PSL’s begin to flow I wanted to take the time to go over some of my favorite Fall things and ways that everyone can get out and enjoy the season in this gorgeous state!

First the essential wardrobe needs for the season…flannels, chunky knit sweaters, and ankle boots.

Since the weather is completely unpredictable this time of year layering is essential. My favorite flannels that I have been rocking are actually from Target!

I’m a fan of buffalo plaid and over sized. This allows for that trendy around the waist look that we have seen so much lately.

My favorite sweater that I have been wearing is from Sora & Co.  Go check out their website because they have so many adorable pieces that will be certain to satisfy your chunky knit needs.

And I’m headed back to Target for my favorite ankle boots. These combat style boots are the most comfortable and are great with just about anything. I’ve worn them with jeans, leggings, and skirts.

Besides the cute outfits, there are so many great things to do during the season.

First go catch the Grizzlies or the Bobcats play a home game. Missoula and Bozeman are such awesome towns that have even better fans. The University of Montana’s homecoming is Oct. 6th and Montana State’s is Oct. 13th. These would be great games to attend no matter who you are cheering for. (Go Griz!)

Check out one of the many Fall festivals or Oktoberfest. With the great brewery scene throughout the state there are so many different seasonal brews to try! Plus these events are usually partnered with live music and great food vendors.

Finally, you knew it was coming… go to Yellowstone! The park in the fall is a happening place for wildlife activity. Particularly for Elk as they begin to rut. The park also takes on stunning colors and the majority of the tourists are gone!

So, grab your flannel and boots and get outside to enjoy the season!

The best ships

“Congrats! You landed your first job and it’s in Great Falls Montana…”

Moving away for your first job can be scary, and it can be even scarier when it’s across the country. Not to mention working in a high stress very low paying job can take a toll on your morale.

However, I am so thankful I took that job in Great Falls because it brought so many great people into my life.

In the world of television news you never know who is going to walk into a newsroom. It’s no secret that it’s an industry full of divas and competitive people who will do anything to get ahead. But then it also has its gems.

My first job gave me a lot of stress, but it also brought me lasting friendships. When work was rough I had these two to help me get through.

Now 2 years later, we don’t work in the same place, and don’t live in the same cities (or state), but still act like there has been no time away.

It’s pretty awesome being able to pick up a friendship just where you left it even when we are all in different places in life, our careers, and even physically. Being able to reconnect the way I can with these two ladies is something special.

A day in Paradise (Valley)

If you have ever been to the Paradise Valley you will immediately understand how it got its name.

The stunning Absaroka Mountains sprawl from Livingston to the North Entrance of Yellowstone National Park.

Highway 89, which will take you right to the park is traveled heavily by tourists in the Summer who have landed at the Bozeman Airport and are embarking on a trip to Yellowstone. But what they may not know is that journey on Highway 89

has so many unique and fun spots to spend the day and get a true taste of Montana.

I have written about Chico Hot Springs before, but seriously STOP THERE! The outdoor hot springs pool is the perfect way to relax, enjoy a beverage, and soak in the mountain air.

You can stay the night at Chico or just stop for a soak after a day of activities at the park. They have towels, locker rooms, and three places to eat. So, you could make a day out of it.

The dining at Chico is great, but if you are looking to get a real sense of small town Montana, drive the 2 miles from Chico to Emigrant where Follow Yer’ Nose BBQ and the Old Saloon bring the outdoor venue to a whole new level.

Follow Yer’ Nose BBQ was just a smoker and a tent when they first opened. Now you can sit outside on a unique patio and listen to a local band while enjoying some of the best BBQ in the state.

Get the ‘Don’t Mine the Yellowstone’ sandwich for two reasons. One it’s dang good! And two because $1 from every sandwich sold goes to the Yellowstone Gateway Business Coalition***.

In the same parking lot as Follow Yer’ Nose is the Old Saloon. You can get breakfast, lunch, and dinner here! Go for the food, but stay for the live music.

The Old Saloon has an old school outdoor stage and this summer have pulled some pretty good musical acts including Turnpike Troubadours (sorry, this concert is sold out)!

There’s plenty of room for dancing and enjoying a cold one. It’s the perfect place for tourists and locals to meet!

Paradise Valley truly is paradise, just ask John Mayer.
